The papaya salad is a traditional and popular favorite in all regions of Thailand. If you cannot find green papaya, you could use grated cucumber instead.

2 tbsp lime juice
2 tomatoes, chopped in wedges
(around 1⁄2 cup)
120 grams green beans
3 tsp coconut blossom nectar 150 grams carrots, grated
3 tbsp light soy sauce
2 tbsp peanuts

SERVES 3

INSTRUCTIONS

Grind the chillies with a mortar and pestle.
Add the green beans and the lime juice, and continue to grind. Add the coconut blossom nectar, soy sauce, tomatoes, and grind some more.
Add the peanuts, and continue to grind. Gradually add the sauce to the papaya and carrots. Mix well, and pound the papaya and carrot with the pestle. The mixing and beating infuses the flavor of the sauce into the papaya.
